Today I really fancied something sweet and had nothing in the house so decided to do some baking! I actually wanted to make Blueberry Muffins but had no milk, yoghurt or substitute milk (almond, rice or oat) so I decided to try making cookies instead.
I used recipes from the Good Food as a guide to make them and it was called ‘Oaty Hazelnut cookies’ but we didn’t have any Hazelnuts in the cupboard so used mixed nuts instead. I usually always tamper with recipes although I’m a bit more reluctant to for baking. Maybe because I remember people saying that baking is a science! We also didn’t have maple syrup or spelt flour so I used honey and normal plain flour instead. I also added peanut butter to make them really nutty. I also made them much bigger than suggested – six instead of nine cookies!
I had one with Genmaicha Tea which is a Japanese green tea with brown rice kernels. Apparently Genmaicha Tea is really healthy for you. I like it as it has a mild roasted taste. It actually went well together.
