We still had Oden leftover from the other day so I made Japanese omelette to go with tonight’s dinner. It’s a folded omelette made in a square pan. When I bought the pan and showed it to a friend, she though it was for a joke. It’s possible to make it in an ordinary pan too but it requires more work to make it in the right shape. It’s quite tricky to avoid the eggs from sticking and falling apart. You need to wipe the pan with oil every time you put the mixture in the pan.
Ingredients are 4 eggs, mirin, soya sauce and dashi (Japanese stock). My dad used to put different things like shrimps and spring onion.
